brownies cookies

ingredients :
  1. 150 gm margarine
  2. 100 gm brown sugar
  3. 2 no eggs
  4. 50 gm chopped walnut
  5. 50 gm soft flour
  6. 2 tbsp coco powder
  7. a pinch of salt
step :
  1. beat margarine with sugar.
  2. add eggs 
  3. add flour
  4. add coco powder
  5. add chopped walnut
  6. beat until bind
  7. pour into mold
  8. bake it about 30 minutes in 180 degree celcius

mazola cookies

ingredients :
  1. 125 gm ground almond
  2. 125 almond nib
  3. 250 gm soft flour
  4. 250 ml corn oil
  5. 125 gm icing sugar
  6. a pinch of salt
step :
  1. add all the ingredients in the machine except oil.
  2. beat until bind
  3. add oil gradually
  4. roll the mixture
  5. shape it
  6. put some almond nip on top of it
  7. egg wash
  8. bake about 10 minutes in 180 degree celcius

choc almond cookies

ingredients :
  1. 125 gm castor sugar
  2. 250 gm butter
  3. 400 gm soft flour
  4. 30 gm coco powder
  5. 200 gm cooking chocolate (melted)
  6. 150 gm almond flake
step :
  1. beat sugar with butter
  2. add flour
  3. add coco powder and almond flake
  4. beat until bind
  5. shape it (roll)
  6. wrap it using plastic wrap
  7. stored it in freezer in 30 minutes
  8. slice the cookies.
  9. bake in 180 degree celcius about 10 minutes.

butter cookies

ingredients :
  1. 500 gm butter
  2. 125 gm icing sugar
  3. 500 gm soft flour
  4. 1 tsp vanilla essence
step :
  1. beat icing sugar with butter
  2. beat until bind
  3. add flour and vanilla essence
  4. beat until bind 
  5. put into piping bag
  6. pipe it.
  7. put some chopped cherry on top of it.
  8. bake about 8 to 10 minutes in 180 degree celsius

choc chip cookies

ingredients :
  1. 100 gm soft flour
  2. 100 gm margarine
  3. 25 gm brown sugar
  4. 60 gm choc chip
  5. 30 gm almond nib
step :
  1. beat margarine and brown sugar.
  2. add flour
  3. add choc chip and almond nib
  4. add one spoon of coco powder
  5. shape it.
  6. bake in 180 degree celsius about 10 minutes

bavarian

ingredients :
  1. 200 gm castor sugar
  2. 4 egg yolk
  3. 1/2 liter milk
  4. 25 gm gelatin
  5. 300 gm whipped cream
step :
  1. beat the egg yolk with sugar
  2. heat up the gelatin
  3. add milk
  4. add gelatin
  5. add whipped cream
  6. mix it well
  7. chilled until needed

chocolate mousse

ingredients :
  1. 3 no eggs yolks
  2. 45 gm castor sugar
  3. 120 gm cooking chocolate (melted)
  4. 330 gm whipped cream
  5. 3 no of eggs white (for meringue)
  6. 45 gm castor sugar (for meringue)
step :
  1. to do meringue, we need to beat egg white with sugar until it stick to the bowl.
  2. on the other hand, beat egg yolks with sugar.
  3. add the chocolate.
  4. add the whipped cream
  5. add the meringue
  6. mix it well
  7. chilled until needed.

cream caramel

ingredients :
for caramelize :
  1. 190 gm castor sugar
  2. 30 ml water
for the body :
  1. 250 gm eggs
  2. 125 gm castor sugar
  3. 1 gm salt
  4. 8 ml vanilla essence
  5. 625 ml milk
step :
for caramelize :
  1. heat the sugar with water until turn brown and thick.
  2. put in the ram king.
for the body :
  1. beat the eggs with the castor sugar.
  2. add vanilla essence
  3. add milk
  4. add salt
  5. strain the mixture
  6. get rid of the bubbles 
  7. put it in the ram king
  8. bake using water bath about 30 to 45 minutes in 180 degree Celcius.

bread pudding

ingredients :
  1. 500 gm white bread
  2. 125 gm butter, melted
  3. 500 gm eggs
  4. 250 castor sugar
  5. 2 gm salt
  6. 15 gm vanilla essence
  7. 625 ml milk
  8. 625 heavy cream
  9. 125 gm raisins
  10. as needed cinnamon and nutmeg powder.
step :
  1. broom the bread with melted butter
  2. put the bread into the mold
  3. put raisins
  4. whisk eggs, vanilla essence, heavy cream, milk, salt, nutmeg powder, castor sugar and cinnamon powder together.
  5. pour the mixture into the mold
  6. press until bread sink
  7. bake with waterbath about 45 minutes to 1 hour in 180 degree Celsius.

creme brulee

ingredients :
  1. 60 gm brown sugar
  2. 6 no egg yolks
  3. 90 gm castor sugar
  4. 750 ml heavy cream (hot)
  5. 4 ml vanilla essence
  6. 1.5 gm salt
step :
  1. beat egg yolks with sugar.
  2. add vanilla essence
  3. add heavy cream
  4. add salt
  5. strain and put in the ram king
  6. get rid of the bubbles
  7. bake with water bath in 180 degree Celsius about 30 minutes to 1 hour.
  8. garnish with brown sugar.

apple strudel

ingredients :
  1. 60 gm melted butter
  2. 60 gm bread crumb
  3. 2 gm cinnamon
  4. 500 gm apple filling
  5. 60 gm ground almond
step :
  1. broom the filo pastry with melted butter
  2. spread bread crumb
  3. put another layer of filo pastry
  4. spread bread crumb
  5. put the third layer
  6. spread the bread crumb but only at the middle
  7. put ground almond also at the middle
  8. put the apple filling
  9. spread some cinnamon
  10. put some more ground almond and bread crumb
  11. brush egg wash to wrap
  12. roll the apple strudel
  13. at the end of apple strudel, fold it.
  14. egg wash
  15. bake in 180 degree Celsius about 18 minutes.

chocolate moist cake

ingredients :
  1. 125 gm self rising flour
  2. 3 no eggs
  3. 155 gm margarine
  4. 1/2 cup coco powder
  5. 175 gm cooking chocolate
  6. 200 gm castor sugar
  7. 1/2 tsp vanilla essence
  8. 3 tbsp whipped cream
  9. 1 tbsp honey
step :
  1. beat margarine with sugar until fluffy
  2. add eggs gradually
  3. add vanilla essence
  4. add flour 
  5. add coco powder
  6. add honey and whipped cream
  7. beat until combined
  8. on the other hand, melt the cooking chocolate.
  9. pour the mixture into mold.
  10. bake in 180 degree Celsius about 20 minutes ..
  11. when the cake cooked, cut away the upper layer thinly.
  12. then, cut the cake into two layer.
  13. coat the first layer with melted cooking chocolate.
  14. put another layer on the top of the other layer.
  15. then, coat the cake fully with the chocolate.
  16. wait until it cooled.
  17. serve.
p/s : cake will be ready if the wooden stick come out clean.


pineapple upside down

ingredients :
  1. 150 gm self rising flour
  2. 2 no eggs
  3. 90 gm margarine
  4. 1/2 cup pineapple juice
  5. 100 gm castor sugar
  6. 1 tsp vanilla essence
  7. 8 no pineapple rings
  8. 100 gm brown sugar
  9. 8 no of cherry
step :
  1. beat margarine with sugar until fluffy
  2. add eggs gradually
  3. add vanilla essence
  4. add flour.
  5. add pineapple juice.
  6. on the other side, arrange pineapple rings in the mold.
  7. put cherry at the center of the rings.
  8. spread the brown sugar.
  9. pour the mixture into that mold
  10. bake in oven with 180 degree Celsius about 20 minutes.
p/s : cake will be ready if the wooden stick come out clean.


marble cake

ingredients :
  1. 250 gm butter
  2. 250 gm castor sugar
  3. 250 gm soft flour 
  4. 1/2 tsp baking powder
  5. 5 no eggs
  6. 1/4 tsp vanilla essence
  7. 20 gm coco powder
  8. 1/2 cup milk
step :
  1. beat butter and sugar until it become fluffy.
  2. add eggs gradually
  3. add vanilla essence
  4. add flour that already mix with baking powder
  5. take some mixture and mix it with coco powder
  6. pour two mixture turn by turn in the mold based on creativity
  7. bake it about 20 min in 180 degree Celcius.
p/s : cake will be ready if the wooden stick come out clean.


fruit cake

ingredients :
  1. 250 gm butter
  2. 250 gm castor sugar
  3. 250 gm soft flour
  4. 1/2 tsp baking powder
  5. 5 no eggs
  6. 1/4 tsp vanilla essence
  7. 270 gm dried mixed fruit
step :
  1. beat the sugar with the butter until it become fluffy. (usually about 15-20 minutes using machine)
  2. add eggs gradually
  3. add vanilla essence
  4. mix dried fruit with some flour
  5. add remaining flour in the mixture.
  6. add baking powder
  7. add mix fruit
  8. then, pour them into a mold
  9. bake the cake in 180 degree Celsius about 20 min.

p/s : the cake will ready if the wooden sticks come out clean

puff pastry

INGREDIENTS :

  1. 500 gm soft flour
  2. 60 gm butter
  3. 5 gm salt
  4. 282 ml water (cold)
  5. 300 gm puff pastry margarine.
HOW TO MAKE :
  1. rub flour with butter.
  2. in another bowl, mix salt with water.
  3. add water in the dough until bind.
  4. rest in chiller about 20 minutes.
  5. roll the dough.
  6. put puff pastry margarine on the dough.
  7. fold double.
  8. wrap with plastic wrap.
  9. rest in chiller in 30 minutes.
  10. fold single and wrap it back
  11. rest in chiller in another 30 minutes.
  12. fold double and rest it back another 30 minutes.
  13. fold single and rest another 30 minutes.
  14. roll the dough.
  15. as the filling, we can use chicken, sardine or castard filling.
  16. bake the puff pastry about 10 minutes under 180 degree celcius.
  17. serve.

chocolate and vanilla sauce

INGREDIENTS :

chocolate sauce
  1. 500 gm cooking chocolate
  2. 500 ml water
  3. 190 gm butter
vanilla sauce
  1. 4 no eggs yolk
  2. 63 gm castor sugar
  3. 4 ml vanilla essence
  4. 250 ml milk
HOW TO MAKE :

chocolate sauce
  1. melt the chocolate.
  2. add water.
  3. add butter.
  4. chilled with iced cube.
  5. serve/
vanilla sauce
  1. beat egg yolk with castor sugar.
  2. add vanilla essence and milk
  3. water bath until napee 
  4. chilled.
  5. serve.

choux paste with pastry cream

INGREDIENTS : 

choux paste
  1. 200 gm margarine
  2. 500 ml water
  3. 250 gm soft flour
  4. 6 no eggs
  5. as needed salt
pastry cream
  1. 100 gm castor sugar.
  2. 2 no eggs
  3. 1/2 tbsp vanilla essence
  4. 50 gm castard powder
  5. 500 ml fresh milk.
HOW TO MAKE : 

choux paste
  1. add water and margarine in the pot and stir them until boiled.
  2. add salt.
  3. switch off the stove.
  4. add flour in the pot.
  5. stir until bind.
  6. beat the dough.
  7. rest until the dough cooled down.
  8. add eggs one by one while whisk the dough.
  9. beat the dough.
  10. put in piping bag.
  11. can create cream puff, eclair, and also paris brest.
pastry cream
  1. beat eggs and castor sugar until dissolve.
  2. add vanilla essence.
  3. in another pot, mix castard powder and milk.
  4. combine the two mixture.
  5. put the mixture in the pot.
  6. keep on stirring until napee
  7. put the cream in the bowl and chilled.
  8. use as filling for choux paste.
cream puff

pizza

INGREDIENTS :

  1. 1700 gm water
  2. 80 gm instant yeast
  3. 3000 gm strong flour
  4. 50 gm salt
  5. 50 gm olive oil
  6. 30 gm castor sugar.
HOW TO MAKE :

  1. Mix all ingredients except salt.
  2. beat about 2 minutes until the mixture bind.
  3. add salt.
  4. beat about 8-10 minutes.
  5. portion the dough.
  6. rest the dough until double size.
  7. punch the dough.
  8. portion the dough back (40 gm each)
  9. shape the dough using round shape cutter.
  10. put filling on top of pizza dough.
  11. bake the pizza about 10 minutes in 180 degree celcius.
  12. serve the pizza.

doughnut

INGREDIENTS :

  1. 825 gm strong flour.
  2. 105 gm castor sugar
  3. 90 gm margarine
  4. 30 gm instant yeast
  5. 375 ml fresh milk
  6. 3 no eggs
HOW TO MAKE :

  1. Mix all ingredients except margarine
  2. after all ingredients bind, add margarine.
  3. bind the dough about 8 minutes (using machine)
  4. rest the dough
  5. after double size, punch the dough.
  6. shape the dough with doughnut cutter
  7. rest the dough
  8. after double size, bake the dough in 10 minutes with 180 degree celcius.
  9. garnish the doughnut.
  10. serve.

Yellow River

INGREDIENTS :
  1. 1000 gm water.
  2. 60 gm instant yeast
  3. 200 gm butter
  4. 200 gm castor sugar
  5. 25 gm salt
  6. 100 gm low fat milk powder
  7. 300 gm eggs
  8. 1600 gm strong flour
  9. 400 gm soft flour
  10. 5 gm yellow colouring 
  11. 400 gm raisin
  12. granulated sugar butter
HOW TO MAKE :

  1. add all ingredients except yeast, raisin and water.
  2. after bind, add yeast and water.
  3. mix about four minutes (using machine)
  4. put raisin.
  5. beat the dough using hands.
  6. rest the dough.
  7. after double size, portion it about 40 gm each.
  8. rest the dough back.
  9. put some butter on the yellow river.
  10. egg wash the dough.
  11. put some sugar on top of yellow river.
  12. bake the yellow river about 10 to 5 minutes under 180 degree celcius.
  13. serve the yellow river.

French Loaf

Ingredients : 
1.  570 gm water.
2.  30 gm yeast.
3.  1000 gm bread flour.
4.  10 gm salt.

Step : 
1.  Mix the flour and yeast.
2.  Add water and salt.
3.  Beat until 12 to 15 minutes (using machine)
4.  Rest the dough.
5.  Portion the dough.
6.  Egg wash the dough.
7.  Bake the French Loaf in 30 minutes with 180 degree Celsius.
8.  Serve the French Loaf.


Soft Roll

Ingredient :
1.  500 gm strong flour
2.  275 gm water
3.  6 gm instant sugar
4.  100 gm castor sugar
5.  60 gm shortening 
6.  5 gm salt

Step :
1.  Mix strong flour, yeast, castor sugar togethet until combine.
2.  Add water.
3.  Add shortening and salt.
4.  Beat about eight to ten minutes (using machine)
5.  Shape the dough.
6.  Rest it until double size.
7.  Punch the dough.
8.  Portion the dough to 30 gm each.
9.  Rest the dough until double size.
10.  Egg wash the soft roll.
11. Bake the soft roll about 10 minutes in 180 degree celcius.
12. Serve the soft roll.

hAllu !!! hey wassup guys ... well , beside this blog , i got another blog , just creating this blog for posting all the recipes that i learn here .. where ? at UITM Dungun of course .. i study here in Diploma in Culinary Arts .. so , no wonder i got many recipes to share :D besides learning new stuff , i also got many many many friends here ....
